Recently, I shared a snap of my lunch on Instagram that got a lot of you asking about my Vegan Chickpea "Tuna" Salad Recipe, served with pita bread. It was super delicious.
I'm now sharing the details on how to recreate this yummy, healthy meal at home and thankfully, it is surprisingly easy and versatile. Put it on top of some organic mixed greens, spread it on some seed crackers, or put it in a pita.

Vegan Chickpea "Tuna" Salad Recipe
RECIPE TYPE: Lunch/Snack
DIETARY INFO: Vegan, Gluten-Free
SERVING SIZE: 3-4
PREP TIME: 10 mins
COOK TIME: 5 mins
TOTAL TIME: 15 mins
INGREDIENTS:
1 can chickpeas, drained
1/4 cup vegan mayonnaise
1 nori sheet, finely chopped
1/4 cup red onion, finely chopped
1 tbsp lemon juice
1/2 tsp garlic powder
1 tbsp nutritional yeast
1 tbsp tamari or soy sauce
1/2 tbsp dijon mustard
1/2 tsp white vinegar
Kosher salt, to taste
Freshly ground black pepper, to taste
INSTRUCTIONS:
1. Use a fork to mash the chickpeas in a medium bowl.
2. Add the remaining ingredients and mix well.
3. Adjust seasonings to taste.
4. Enjoy!
